Why 0°C Really Makes a Difference

Caviar is a fresh product with very high thermal sensitivity. It is not a frozen food and cannot be transported like a normal refrigerated product.

To maintain quality, consistency and real shelf life, the temperature must remain stable between -2°C and +2°C , with an ideal value close to a constant 0°C .

When this condition is not respected, deterioration begins even if the product still appears perfect.

What is the correct storage temperature for caviar?

The storage temperature of caviar does not coincide with that of a domestic refrigerator.

The correct range is:

- from -2°C to +2°C
- ideal around 0°C

Temperatures above 4°C accelerate natural degradation processes and reduce the product's shelf life.

Caviar must not freeze, but it must not heat up either. Thermal stability is the most important factor in preserving its characteristics.

Even a small change can alter the structure and consistency of the pearls.

Why ice isn't enough to ship caviar

Many caviar shipments are shipped with traditional ice or synthetic ice inserted into the packaging.

This system has a clear limitation. The ice melts and the internal temperature gradually rises without any real control.

When the temperature exceeds 4 or 6°C, invisible changes begin that compromise the quality of the product.

- release of liquid inside the package
- reduction of actual duration
- less clean aromatic profile
